Potassium citrate (also known as tripotassium citrate) is a potassium salt of citric acid with the molecular formula K3C6H5O7. It is a white, hygroscopic crystalline powder. It is odorless with a saline taste. Potassium citrate is another antioxidant and buffering additive that is found in a number of food products including cakes and biscuits, cheese and jam.

 Potassium Malate is the potassium salt of malic acid . As a food additive, it has the E number. It is used as acidity regulator or acidifier for use in, for example, canned vegetables, soups, sauces, fruit products and soft drinks. It also acts as an antioxidant and as a food flavour.
